Sustainability

ZFV's sustainability strategy focuses on holistic, responsible catering that integrates both environmentally and climate-friendly approaches. With around 9 million meals a year, we pay attention to where our ingredients come from and how they are prepared. Our aim is to make a positive contribution to the environment and at the same time sensitise our guests to climate-friendly nutrition. We offer innovative recipes and concepts, such as Switzerland's first vegan canteen, and use our FOOD2050 menu guidance system to minimise our impact on the climate.

FOOD2050 is a holistic menu guidance system that transparently evaluates the menu creations offered by ZFV in terms of climate impact and nutritional balance. The system is based on the Climate Impact Model (CIM). It translates the scientifically calculated climate emissions of menus into their climate impact in degrees Celsius. The results help ZFV companies to make their offerings more climate-friendly. By additionally evaluating all ZFV recipes according to nutritional categories on the basis of the ‘optimal plate’ of the Swiss Society for Nutrition (SGE), the system at ZFV locations offers the opportunity to inform guests just as transparently about the balance of the menus on offer. Both serve the goal of promoting more conscious, healthier and climate-friendly consumption and contributing to the achievement of climate targets.
