Fighting food waste

We handle food responsibly because globally a good one-third of food is lost along the food chain. Even if the lion’s share of food waste occurs during processing and in domestic households, we want to make a stand and show our commitment. 

In order to reduce food waste as much as possible, we train our employees to increase their awareness, ensure that menus and purchasing are well planned, and think about leftovers when planning menus, thereby inspiring our guests to avoid food waste when eating at home. 

Furthermore we cooperate with Centrale Végétale (only in German). The Zurich association rescues misshapen, rejected vegetables from local farmers and uses them to conjure up tasty dishes.
